That’s not a knife – This sounds like a knife. The worlds first ultrasonic chef’s knife shown off at CES 2026

Seattle Ultrasonics announces the world’s first Ultrasonic chef’s knife.

This year at CES 2026 US company Seattle Electronics has opened pre-orders for their 200mm (8”) C-200 knife that utilises ultrasonic vibration to provide “smoother cuts with less effort”

The C-200 uses PZT-8 piezoelectric ceramic crystals to vibrate the blade at over 30,000 times a second, making the knife behave sharper than it physically is. This is achieved by the ceramic material expanding very slightly in one direction when a current is applied.

Seattle Ultrasonics claim that the vibration is directed at the blade, not the handle so the user does not feel the vibrations as the knife slices through ingredients faster and smoother than a conventional knife.

“Sounds” like magic right? Their research has found that 50% less effort is needed to slice and dice and they measured that with a robot. The idea of knife-wielding robots might also be the stuff of nightmares.

You can’t hear it, you can’t feel it but the process of preparing food feels “slicker” according to the manufacturers.

Creator, Scott Heimendinger said that he had spent almost 6 years developing the knife. “I’ve seen firsthand how industrial ultrasonic technology makes clean, effortless cuts. I asked myself, ‘Could I fit that technology into a chef’s knife?’ After years of research, development, and more than a few setbacks, the answer is yes. The C-200 does things no other knife can.”

Specifications:

  • Blade length: 200mm (8″)
  • Steel: Japanese AUS-10 in three layer (san mai) construction.
  • Hardness: 60HRC
  • Edge angle: 13 degrees per side (26 degrees inclusive)
  • Battery: 1100mAh removable lithium-ion battery pack
  • Charging: USB-C, or with the Wireless Charging Tile
  • Water resistance: IP65
  • Operating frequency: 33kHz
  • Operating power: 10W
  • Includes: C-200 Ultrasonic Knife, removable Li-ion battery pack, user manual

An optional charging tile is also available to purchase

Pre-orders are open now but no word if the knife will come to Australian retailers but international shipping is available. The knife alone sells for $AUD585 or $AUD709 for the knife/charging block bundle (plus shipping). Not cheap but wouldn’t it be something to show off at parties? Maybe early in the night though, not after a few drinks
